What will I study?

Food science is a highly interdisciplinary science incorporating many different fields including microbiology, chemical engineering, and biochemistry. It deals with issues such as food safety, product development, the industrial processes used to manufacture food, food preservation, food technology, packaging, molecular gastronomy and sensory analysis. As one of the life sciences it is quite distinct from the field of nutrition.

Students majoring in Food Science will:

  • Learn the processes involved in developing, producing and evaluating new foods;
  • Examine the causes and prevention of foodborne illnesses;
  • Acquire the methodologies for microbiological and chemical testing of food;
  • Discover the causes and prevention of quality degradation;
  • Study the physics and physical chemistry of food; and
  • Apply this knowledge to industry based problems.

Food science is available as a single or extended major.

1. The prerequisite for the major is BIOL1020 or BIOL1040. Students only need to take one of these to meet the prerequisite for this major.
2. The prerequisite for the major is CHEM1100 or CHEM1200. Students only need to take one of these to meet the prerequisite for this major. Students without Queensland Senior Chemistry should complete CHEM1090 before taking any other chemistry course

 

Year 2 to 3 Study Planner

Food Science is available as a Single Major or an Extended Major. For the Single Major you are required to complete #14 (#6 at Level 2 and #8 at Level 3) and for the Extended Major you are required to complete #22 (#10 at Level 2 and #12 at Level 3) from the Food Science course list.
